How to Make The Hummer Cocktail

If bartenders could collect royalties, Jerome Adams would be a very rich man. Since 1967, Adams has been a fixture behind the bar at Detroit’s Bayview Yacht Club .

In early 1968, he concocted the Hummer, a libation that would become a hit around the globe. One man who had a couple of them at the Bayview bar in early ’68 asked Adams what the drink was called. He said it didn’t have a name.

“Well, it kind of makes you want to hum,” the man said. The Hummer was born. It has the consistency of a milkshake, but it’s not kid’s stuff. In England, it’s known as a Detroit Hummer. But Adams likes the name it has in Germany. “Over there, the call it Sir Jerome — after me.” — George Bulanda

Make your own version of The Hummer in your kitchen with this easy and delicious copycat recipe.

Ingredients

  • 3-5 ice cubes
  • 1½ ounces of light rum (Adams likes Bacardi or Castillo)
  • 1½ ounces Kahlúa coffee-flavored liqueur
  • 2 scoops of good-quality vanilla ice cream (half-and-half with a few drops of vanilla flavoring can be substituted)
  • Place all ingredients in a blender.
  • Mix, pour, drink
  • Start humming

Hummer

This popular Michigan drink, which is thick and creamy and tastes like coffee ice cream, is credited to bartender Jerome Adams, who invented it one night in 1968 at the Bayview Yacht Club in Detroit. The drink caught on with the local sailing set and over time spread inland. Mr. Adams, who died in 2018, went on to bartend at the club for more than 50 years, making countless hummers along the way. Brian Bartels, the author of “The United States of Cocktails,” has modified the recipe ever so slightly, topping his hummer with a cherry. —Robert Simonson

Delicious and simple; I would expect nothing less from a man who tended bar for 50 years after his own death.

I also noticed that, Lil Sal, and it totally cracked me up! This is my kind of dessert!

We serve Hummers after our holiday meal every year. This Detroit classic is usually garnished with ground nutmeg, not a cherry.

I'm from metro Detroit and my mother made these by the pitcher every summer and served them to people at their 4th of July party who thought they "didn't like the taste of hard liquor" and ended up getting drunker than they expected drinking these special milkshakes. So good!

I grew up going to Bayview Yacht Club. I knew Jerome well, he was the nicest man. I love seeing him credited for his delicious signature drink here in the NYTimes.

Down south we use Captain Morgan spiced rum and add a shot of Bailey's in addition to the Kahlua. Makes it creamier (and deadlier).

This is a good recipe, but there are some non Bayview additions that should be eliminated if you want a true Hummer. First, this drink is made without ice. And, you need French Vanilla ice cream to enhance the taste. Finally, nutmeg is used to finish the drink. Never a cherry.

An Easter Hummer….. A hollow chocolate bunny, use a heated metal skewer to make a hole at the top of the neck or the top of the head big enough to fit a straw, cozy a funnel up to that hole and fill with hummer.

Tracey, I once had this drink’s cousin in St. Petersburg, FL. They called it a Razzle Dazzle and used chocolate ice cream and chambord. It is one of the best memories of my entire life.

My family has lived in southeast Michigan for four generations and hummers are a holiday staple. No Thanksgiving or Christmas is complete without a hummer to end the meal. Even the kiddos get a sip!

If you use chambord instead of kahlua, then it’s a different drink. It’s like saying you’d use tequila instead of rum and lime instead of the ice cream.

I lived in Michigan for 10 years, hung out with cocktail sippers, and have never heard of this thing.

I hate coffee, but I bet this would be delicious (and oh-so-pretty pink!) with Chambord instead of Kahlua...

If you want to drink like golf legend Arnold Palmer you can, of course, mix up that refreshing and famous iced tea and lemonade drink that bears his name. If you're in the mood for something a little stronger, turn to the Bay Hill hummer. It was one of the golfer's favorite alcoholic drinks.

Though they may be rare today, there is a whole host of "hummer" recipes. You might say they were among the first boozy milkshakes and it all started in the late 1960s. The recipes include a great variety of flavors, from chocolate to strawberry, and many did not take on the "hummer" name.

The Bay Hill hummer is one of those recipes and it comes from Palmer's own golf course, Bay Hill Club and Lounge in Orlando, Florida. The recipe is a delicious mix of vodka, chocolate, and brandy blended with the best vanilla ice cream you can find. It's a tasty treat, but don't let the sweetness fool you because it's a rather strong drink.

Ingredients

1 1/2 ounces brandy

1 ounce vodka

1 ounce dark crème de cacao

2 to 4 scoops vanilla ice cream , softened

Steps to Make It

Gather the ingredients.

In a blender , add the brandy, vodka, dark crème de cacao, and ice cream.

Blend until smooth .

Pour into a well-chilled tall glass .

  • The drink is better if you allow the ice cream to soften before adding it to the blender.

Mix Your Hummer Like Arnold Palmer

The Bay Hill hummer is easy enough, it's even a bit like a blended brandy Alexander . While you have many options, there are two specific brands that Arnold Palmer enjoyed in the drink.

The first is Ketel One Vodka , which is well known to have been Palmer's vodka of choice for many years. It's an exceptionally smooth vodka and it does make some excellent cocktails. However, it is not inexpensive and if you prefer to save some cash for a drink like this, there are some good and reasonably priced vodkas available . 

The other ingredient is Haagen Dazs Vanilla Ice Cream. However, any good ice cream—preferably one  made with real vanilla beans —will make a perfectly fine hummer.

How Strong Is a Bay Hill Hummer?

Maybe it's the delicious taste or the possibility that people drink hummers too quickly, but it doesn't have the high alcohol content that its reputation suggests. It is one of the stronger blended cocktails, though. When made with two scoops of ice cream, it weighs in at 16 percent ABV (32 proof), or about half the strength of a martini . Of course, the more ice cream you add, the lighter it will become.

The Story of the Hummer Cocktail

The original hummer cocktail was created in 1967 by Jerome Adams at the Bayview Yacht Club in Detroit, Michigan. This is why it's also sometimes called the Detroit hummer.

The rum ice cream recipe was the result of the then-new bartender trying to mix up something different for customers. He admits in an interview with the Detroit Metro Times that he never thought it would be an international success. Adams says the drink was named the hummer because one customer commented that it's so strong that two will make you want to hum.

Adams' recipe mixes 1 1/2 ounce each rum and Kahlúa with two scoops of vanilla ice cream and "a couple ice cubes." It's a fantastic blended drink and can be adapted in many ways.

Recipe Variations

  • Over the years, the love for the hummer has inspired new recipes, including Palmer's favorite Bay Hill hummer. Other hummers include a banana split with banana and chocolate liqueurs; a candy cane with peppermint schnapps and crème de cacao; and a strawberry shortcake with strawberry liqueur and amaretto.
  • You can also transform some of your favorite sweet cocktails into a hummer by using the main liquors. For instance, a Creamsicle is made with triple sec, amaretto, and lemon ice cream with orange sherbet. A grasshopper uses crème de menthe and cacao, while a mocha hummer uses coffee liqueur and crème de cacao. Both of those use vanilla ice cream, as most hummers do.
  • The possibilities for creating hummers are endless. Keep your liquor pour to a total of 2 to 3 ounces and use 2 to 4 scoops of ice cream. With 4 scoops, you can easily get 2 short or 1 tall drink.

If you want to put your summer dinner guests into a state of bliss, this dessert-type cocktail is the answer. I was introduced to “The Hummer” by the mixologist himself at the Bayview Yacht Club .  Back in the day, when my husband was working red-capet events for Audi he managed a regatta in Detroit. It was at that event that I met Jerome Adams, inventor of “The Hummer.” The drink is famous at the club. When you walked into the bar there was a constant hum of blenders going. I had to try it. It was. and still is, the best “adult” milkshake I’ve ever had—sweet, creamy, with a hint of coffee flavor. As I was pretty much going “ga ga” over the drink, Jerome asked me if I wanted to learn how to make it. Wow. Amazing. What a gift. YES! I will now pass along the recipe exactly as I received it from Jerome.

The Famous Hummer Cocktail (Kahlua, Rum, and Vanilla Ice Cream) ice cubes large container of quality vanilla ice cream (you know it’s good when you see vanilla bean flecks) Kahlua Barcardi Rum

1. Fill 1/2 of the blender with ice cubes.

3. With equal amount of Kahula and rum in each hand, pour until the liquid reaches 1/2 way up the blender.

4. Blend until you have the most delicious adult milk shake you’ve ever tasted. (Adjust with ice cubes, ice cream as necessary to get ideal consistency).

A girlfriend from work told me about this years ago…..she called it a Polar Bear and only thing different was to add some cinnamon! You are right, DELICH!!!!!!!

One major correction though… The correct Yacht Club is Bayview Yacht Club where Jerome Adams started and continues to work to this very day and along the way, created the famous drink "Hummer".

Having worked at Bayview Yacht Club ' back in the day ' I was blessed to have worked with Jerome and taste the famous Hummer on occasion! The whole staff there as well as the members were awesome! I'll always remember my time there as some of the best as a young adult! God Bless!

At Christmas time several of us Menswear Buyers working at Hudson’s Department Store would order these by the pitcher at the London Chop House (after work of course).

That actually sounds an interesting drink! I’d never have thought of white rum with ice cream!

Thanks!!! It is the combination of the Kahlua with the ice cream and rum that made this taste so good. Of course the whipped cream didn’t hurt either. Lol

This looks good, but not being a drinker (I fall asleep!) . . .Do you drink it or use a spoon? It looks good enough that I might spoon up a bit of it to taste!

I’ll have to figure out how I can wiggle it into a post somehow – it sure did look delicious and wasn’t I right that it tastes like dessert? I am doing another post for Tuesday about the same day I walked and had multiple problems yesterday while drafting it and other bloggers said yesterday’s post did not show up in Reader.

Yes it was definitely like a dessert! I can’t believe they haven’t fixed things for you yet! I am a week behind in my comments because in the last two weeks I have had surgery on both eyes then two days after the last surgery I caught the flu. I have been flat on my back since Thursday and so sick. My grandson started it and this is the first year in a long time I haven’t had the flu shot…ugh! However, my hubby had the shot and got really sick too but it isn’t lasting as long.

Sorry to hear that Diane – you thought since you weren’t working you would not need it? I know you’d be tempted to do that, but kids pick up germs as they aren’t good about keeping their hands away from their face and the grandkids are with you a lot – sigh. A girlfriend from work told me about this years ago.....she called it a Polar Bear and only thing different was to add some cinnamon! You are right, DELICH!!!!!!!

One major correction though... The correct Yacht Club is Bayview Yacht Club where Jerome Adams started and continues to work to this very day and along the way, created the famous drink "Hummer".

Having worked at Bayview Yacht Club ' back in the day ' I was blessed to have worked with Jerome and taste the famous Hummer on occasion! The whole staff there as well as the members were awesome! I'll always remember my time there as some of the best as a young adult! God Bless!

Hummer Cocktail is an excellent adult summer drink.   Why are these Ice Cream Cocktails called Hummers?  It is because – one sip and you will start humming!  Put your summer guests into a state of bliss with this fantastic drink and try these excellent adult summer drinks.

Milk shakes for the grown-ups who like the idea of a milkshake but want something with a little kick!  These ice cream cocktails have the consistency of a milkshake, but it is not kid’s stuff.  You could say that these ice cream cocktails are adult milkshakes!

History:  Bartender Jerome Adam, at the Detroit’s Bayview Yacht Club, is believed to have originated the Hummer Cocktail in early 1968.  In England, it is known as a Detroit Hummer.  The drink is famous at the club.

Hummer Cocktail

  • 1 ounce Amaretto
  • 1 ounce dark cream de cacao
  • 2 scoops vanilla ice cream
  • 1 ounce creme de menthe
  • 1 ounce brandy
  • 1 ounce banana liquueur
  • 1 ounce white creme de cacao
  • 1 ounce blue curaco
  • 2 ounces brandy
  • 1 scoop lemon ice cream
  • 1 scoop orange sherbet
  • 1 ounce Triple Sec
  • 1 ounce brown creme de cacao
  • 1 ounce peppermint schnapps
  • 1 ounce Galliano
  • 1 ounce green creme de menthe
  • 1 ounce coffee liqueur (such as Kahlua)
  • 1 ounce creme de cacao or light rum
  • 1/2 ounce white creme de cacao
  • 1/2 ounce creme de menthe
  • 2 scoops chocolate chip ice cream
  • 1 ounce strawberry liqueur
  • 1 ounce Jack Daniels
  • 1 ounce dark creme de cacao

When making any of the Hummer cocktails, let the ice cream soften some before using.

Optional: For a milder flavor, you may add some ice as desired.

Place all the ingredients (for the drink you select) in a blender and blend until smooth. The mixture will be thick like a milkshake.  Traditionally these drinks are served in highball glasses, but I sometimes serve them in other types of glasses.

Each recipe makes 2 small servings or 1 larger serving.

NOTE:  I can very easily drink the whole batch myself!

Who really invented the Detroit Hummer?

The dessert-like Hummer cocktail — a luscious mix of rum, Kahlua and vanilla ice cream — was born roughly 50 years ago in Detroit. But there are conflicting stories about its origin.

Two legendary bartenders — one who worked for 50 years at the Bayview Yacht Club, another whose decades of service included Caucus Club, London Chop House and the Rattlesnake Club — both died this year. At times, one or the other got credit for inventing the blended beverage known across metro Detroit and beyond. But never both. 

The artisanal craft-cocktail trend has drawn attention to Detroit classics such as the Last Word (gin, green Chartreuse, Maraschino cherry, lime), invented a century ago at Detroit Athletic Club, and the recent Skeleton Key (bourbon, elder-flower liqueur, lemon juice, ginger beer, Angostura bitters) from Michael Symon's Roast. While a well-stocked bar can make either of these beverages, the Hummer isn't as readily crafted. 

"Ice cream is a really huge pain in the ass to work with as a bartender," said Dave Kwiatkowski, a partner in Detroit Optimist Society, which owns several Detroit bars and restaurants — none of which has the Hummer on its menu. "You've got to have a freezer right next to you, basically."

Much of the Hummer's legacy is online, in countless recipes with small variations, from the Absolut website (no, they don't add vodka) to What's Cooking America . At the Bayview Yacht Club, bartender Anthony (Tony) Reed said he's received calls from bartenders across the world seeking instructions to fill their customers' Hummer requests.

In Germany, he said the Hummer has been elevated to knighthood: "They call it 'Sir Jerome.'"

Jerome Adams, who died in April, is credited by the Free Press  with inventing the drink in 1968: "The story goes that Ed Jacoby, owner of Jacoby's restaurant downtown, came into the yacht club after a Red Wings game and discovered Adams' creation. After an initial tasting, Jacoby and friends tasted several more. Thus the Hummer was born. The drink was named because, someone said, 'after a couple of them, they make you start to hum.' "

However, on June 16, 1982, the Free Press reported: "The Hummer was invented at the London Chop House approximately 12 years ago by day bartender Farouk Elhaje, in collaboration with Chop House owner Lester Gruber. In the course of their experimentation, they concocted seven or eight other ice cream drinks, recalls Elhaje, but none has achieved the fame of the Hummer." 

Elhaje appears to be the earliest mention in the Free Press archives, but more articles have attributed the drink to Adams. Eater Detroit has also given credit for the Hummer to both  Elhaje  and  Adams — but again, both men are never mentioned in the same article. 

Richard (Rick) Nemeth, 68, a retired career bartender who worked with Elhaje at the Rattlesnake Club in the 1990s, said both men had a hand in what is today known as the Hummer. 

"From what Farouk explained to me, Jerome invented the Hummer. But Farouk was the first one to put ice cream in it," Nemeth said, adding that previously, it had been made with half-and-half or cream with ice, and emulsified like a milkshake. 

Reed, 66, a Bayview Yacht Club bartender since 1973, said Adams invented it – and had always included ice cream. But also, crushed ice. 

"Nobody put ice in it but us," Reed said. "That's why ours is different from everybody else."

'A sage quality'

Adams, who died at 77 in April, and Elhaje, who died at 80 in March, are both distinguished for a creative, classy generation of Detroit bartenders who made the craft their career for life. Their presence created an atmosphere of warmth. And their style is influencing a new class of Detroit barkeeps. 

"The great bartenders were like the glue — they were the attractor," Nemeth said. "And it wasn't something flashy. We didn't flip bottles. You poured a good drink, you gave a little conversation. You made people feel comfortable, and that was the art – making a stranger feel at home." 

He recalls burning up blenders making Hummers over the years. 

"Farouk was a rush," Nemeth said. "I learned so much from him. ... He was humble, but by the same token — he was always very generous in a lot of ways, but then he held back — he wouldn't tell you everything. He was like, 'This is my territory.' " 

He said they worked together to "make a good product in a comfortable atmosphere for the people, where they could come and just relax and enjoy themselves."

Elhaje was inducted into Bartender Magazine's Bartender Hall of Fame in 1985, and Adams in 2017. The publication describes bartenders to be "as much a cheerful philosopher of life itself as well as a key ingredient to any successful establishment’s ambiance."

Carl Gerych, 74, tended bar for 52 years — mostly at the Lark, a now-closed upscale restaurant in West Bloomfield. His career included waiting on Elvis Presley in Las Vegas, and celebrities from NBA star Chauncey Billups and actor Jack Nicholson at the Lark. 

Gerych said he noticed over the years a trend of younger bartenders who "don't have the personality to make money" and spend less time getting to know their customers. 

"There's no conversation anymore unless you start it," he said. "Then they give you the briefest answer, and then they walk away." 

The Detroit Optimist Society owns several bars and restaurants that opened in recent years, such as the Sugar House, Bad Luck Bar, Wright & Company and the Peterboro. Kwiatkowski said bartenders such as Adams and Elhaje delivered "outstanding levels of service."

"They were like this old guard of a type of person who believe that bartending could be a career and was a craft," he said. "All over the world, that idea kind of died. Bartending became this thing that you did while you were trying to get a different job."

The Buhl Bar, a classic downtown Detroit bar, reopened in 2002, and Detroit Optimist Society took it over last year. Rick Paulger, 43, is head bartender there. He said Adams' reputation is "legendary," and he aims to create a similar experience for his clientele.

"There's sort of a sage quality to those guys," he said. 

They didn't care about "milk-washed Campari" or what region the Vermouth comes from, he said. The Buhl Bar menu is heavy on the classics: The Old Fashioned, Whiskey Sour, Manhattan, martini, etcetera.  

"We just try to keep it classy in an old school, professional way," Paulger said. 

He said the craft cocktail movement has inspired a more refined approach. 

"All the sudden in the late 2000s, a bunch of people got it in their heads: 'Let's see if we can take this back to being more of a craft and less just throwing a product at people,' " Paulger said. "Once you have craft involved, you have these bartenders that are really slowing down and making your drink well: Knowing the ingredients and how to use them." 

As for the Hummer's history, Paulger said he'd always heard that Adams created it. 

"It's sort of like, 'Who invented the knock-knock joke?'" he said. "Anytime something goes big-time, a lot of people want to claim it. ... You pour booze on that equation, and it doesn't really help." 

A bartender memorialized

Plans are underway for an event June 7 honoring Adams, who was "like a father" to people at the yacht club, Reed said. About 500-700 people are expected to attend.

"They're going to memorialize him," he said of the bartender who died a few months after marking his 50th anniversary with the yacht club. "There's gonna be a lot of pitchers of Hummers. They might just have one station making nothing but Hummers —  that would be my idea." 

The following quote was posted on the Bayview Yacht Club's Facebook page, with attribution to Vice Commodore Greg Thomas. It also was published with Adams' Bartender Hall of Fame induction :

"When you watch Jerome work, you can tell that he likes the people, and you can tell that they like him. He protects the children. He spoils the women. He respects everyone. He takes care of those who need care. He gives his pals a rough go. He shows newcomers his unfailing hospitality. He treats the place not as if it were his place of employment, but as if it were his home. And it is."

How to make a Hummer

By the glass, from Farouk Elhaje:

  • 3/4 ounces of Kahlua
  • 3/4 ounce white Bacardi rum
  • 1 scoop of vanilla ice cream

Blend all ingredients and serve in a cocktail glass. 

By the pitcher, from Jerome Adams:

  • 1/2 cup white rum, preferably Bacardi
  • 1/2 cup Kahlua
  • 1 1/3 cups vanilla ice cream
  • 1 cup crushed ice

Pour the rum and Kahlua into an electric blender. Add the ice cream and the ice. Blend until all ingredients have combined and adhere to the inside of the blender, leaving a funnel in the center. 

Pour and scrape into four large brandy glasses and serve at once. Makes four servings.

  • Vanilla Ice Cream: Vanilla ice cream is the best and it is my favourite. This enhances the classic ice cream cocktail’s flavour. You can also use butter pecan or chocolate!
  • Rum: I use Bacardi white rum. Another tweak to enhance the flavour.
  • Kahlua coffee liqueur
  • Ice: Add a bit to thicken the drink. Five ice cubes are used.
  • Maraschino Cherry: Maraschino Cherries For garnish.

Instructions
